- 2 Chicken breasts, halved and lightly flattened
- Pinch, salt
- 0.25 cup Flour
- 1 Egg, beaten with a splash of water
- 0.5 cup Breadcrumbs
- 1 Tbs dried ground oregano
- 1 Tbs Fresh black pepper
- Spray oil
- 0.66666666666666663 cup tomato sauce for pasta or pizza
- 4 slice low fat Manchego cheese
- 4 large fresh basil leaves
- Green salad

1. Pre-heat the oven to 180°C/350°F
2. Season the chicken breasts with salt and bread them passing them first through the flour, then the egg and last on the breadcrumbs with oregano and pepper.
3. Spray the chicken with oil and place on a baking rack. Bake for 15 to 30 minutes until golden brown (& internal temp reaches 74°C/ 165°F)
4. Remove from the oven and raise the temperature to 300°C or set to broil if possible.
5. Baste the chicken with tomato sauce and top with a slice of cheese. Bake again until melted, around 5 minutes.
6. Garnish with basil leaves and serve with your preferred salad.
