For the hummus
- 1 cup cushaw pumpkin
- 1 clove Garlic, halved
- Oil spray
- 1 tsp Salt flower
- 1 tsp Ground cumin
- 1 cup Chickpeas, cooked in unsalted water
- 0.25 cup Aquafaba, chickpea cooking water
- 2 Tbs Olive oil
- 2 Tbs Lemon juice
For the toast
- 1 slice multigrain bread
- 1 Tbs pumpkin hummus
- 0.5 cup Arugula
- 1 Egg, (fried, scrambled, poached, etc)
- pinch Fresh black pepper
- pinch chili flakes and parsley

For the hummus
1. Pre-heat your oven to 220ºC/420ºF.
2. Place the pumpkin and garlic in a baking tray. Spray them with oil and season with salt and cumin.
3. Bake the pumpkin for 20 minutes or until it’s soft and roasted.
4. In a food processor, blend the baked ingredients with the chickpeas, aquafaba, olive oil and lemon juice. You should get a creamy and homogenous hummus.
5. Keep refrigerated.
For the toast
1. Toast the bread and spread some hummus over it.
2. Lay some arugula and egg on top and garnish with pepper, chili flakes and parsley.
3. Enjoy immediately.
