Ingredients

Main Dish
- 12 oz Lions Mane
- 4 Sweet potatoes, diced large into 2-3 inch cubes
- 2 clove Garlic, minced
- 1 Yellow onion, diced
- 1 jalapeno
- 2 tbsp Curry powder
- 0.5 tsp Allspice
- 0.5 tsp Thyme
- 2 tsp Salt, or to taste
- 0.5 c green lentils
- 2 c water, adjust as needed
- 1 c green peas

Directions

Prepare the Mushrooms
1. Break the Lions Mane mushroom into bite-size pieces.
2. Heat a well-seasoned cast iron pan on medium heat.
3. Add the mushrooms and using a burger press or heavy pan, press the mushrooms to release the excess water.
4. Once the water begins to release, increase the temperature to high until all the water has evaporated and the mushrooms are lightly browned.
Start the Curry
1. Add ¼ cup of water to the pan and heat on medium-high.
2. Add onions and water-saute for 2-3 minutes.
3. Add minced garlic and jalapeno.
4. Saute for an additional 2-3 minutes.
5. Add water as necessary.
6. Add dry spices.
7. Saute momentarily.
Add the Lentils
1. Add lentils and 1 cup of water.
2. Cover and simmer for 10 minutes.
Add the Sweet Potatoes
1. Add sweet potatoes.
2. Add 1 cup of water.
3. Cover and simmer for 15 minutes or until potatoes are just soft.
Finishing it Up
1. Add prepared lions mane mushrooms and simmer for 5 minutes or until potatoes are breaking ever so slightly (do not overcook).
2. Add peas and stir.
3. You can add more water in small amounts if necessary.
4. As the potatoes break down slightly the sauce will thicken.
5. Allow to sit and thicken before eating.
