- 1 Tbs Corn oil
- 400 g Oyster mushrooms, julienned
- 1 l Vegetable stock
- 2 Carrots, diced
- 1 small potato
- 2 clove Garlic, chopped
- 0.5 Onion, chopped
- 3 Tomatoes, in quarters, remove the seeds
- 1 twig epazote
- 1 cup Green beans, sliced
- 0.5 cup Chickpeas, cooked
- 2 Tbs chipotle
- 0.5 cup quesillo or Oaxaca cheese
- 0.5 Avocado, diced
- Limes, to taste

1. Heat half of the oil in a pot and add the mushrooms, let them sear lightly. Pour the vegetable stock and bring to a boil. Add the carrots and potato.
2. Heat the remaining oil in a pan and fry the garlic, onion and tomatoes until they change color.
3. Transfer to your blender and blend with some of the stock if necessary. Strain and pour the sauce into the pot. Season with epazote, salt and pepper to taste.
4. Add the green beans and chickpeas and keep boiling for 10 more minutes.
5. Serve hot with the shredded cheese, some chipotle and avocado.
6. Share and enjoy with some lime juice.
