- 1 Sweet potato, large
- 2 tbsp Olive oil
- water, as needed
Pesto
- 0.5 c cashew nuts
- 0.25 c Pumpkin seeds
- 2 c Basil leaves, loosely packed
- 0.25 c Nutritional yeast
- 0.5 c Extra virgin olive oil
- 0.25 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste

Directions

Preparing the Sweet Potato Noodles
1. Peel and spiralize the sweet potato.
2. Sauté it in olive oil for about 5 minutes.
3. To prevent the noodles from sticking to the pan, add a little bit of water.
4. Be careful not to overcook the noodles, as they should still have a bite to them.
Preparing the Vegan Basil-Pumpkin-Seed Pesto
1. Begin by processing the cashews and pumpkin seeds in a food processor.
2. Then add in the remaining ingredients, except for the olive oil, and pulse a few times.
3. Gradually stream in the olive oil at the end.
Combining and Serving
1. Once the noodles and pesto are both ready, simply combine them in a bowl and enjoy!
