- 1.5 lbs Chicken thighs
- 6 Garlic cloves, thinly sliced
- 2 tbsp Fresh ginger, finely chopped
- 0.5 c jasmine rice
- 6 c water
- Kosher salt

- fresh cracked pepper
- fried onions
- fried shallots
- Scallions
- chili crunch
- Soy sauce

Preparation of Soup Base
1. Add all ingredients to a pot.
2. Bring to a boil and simmer for 45 minutes, stirring occasionally, or until the rice is very tender and has thickened the soup almost to a creamy consistency. A little more time might be necessary.
3. Shred the chicken and add it back in.
4. Taste for seasoning- probably needs a bunch more salt.
5. Add all your toppings.
