Blueberry Glutinous Rice Flour Cake
- 45 g glutinous rice flour
- 10 g corn flour
- 30 g Sugar
- 50 g blueberry
- 80 g oat milk
- 10 g unflavored oil
- condensed oat milk
- coconut flakes

Blending the Ingredients
1. In a blender, add blueberries and the evaporated oat milk.
2. Blend until smooth and filter if needed.
3. Measure 6 and 1/2 tablespoons and keep it aside.
Preparing the Dough
1. In a pan, add glutinous rice flour, corn flour, sugar and the 6.5 tablespoons blueberry milk.
2. Mix until combined.
3. Add oil and mix until combined.
4. Mix and cook on medium heat until a soft dough is formed.
Forming and Coating the Bites
1. Let it cool a bit.
2. Use hand gloves and knead well until stretchy.
3. Divide into bite size pieces and coat with corn flour to prevent sticking.
4. Dip in condensed oat milk and coconut flakes.
