Ingredients

Fava Bean and Carrot Salad
- 1.5 pounds fava bean pods
- Kosher salt, For Blanching
- 2 Carrots, small, thinly sliced
- carrot greens
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon Lemon juice, fresh, from 1 lemon
- 1 large pinch Lemon zest, grated
- 1 Shallot, small, thinly sliced
- Black pepper, freshly ground, to taste
- 6 ounces Ricotta cheese
- 4 slices hearty toast

Directions

Preparing the Fava Beans
1. Open up fava bean pods and remove individual beans. Discard pods.
2. Bring a medium pot of salted water to a boil and prepare an ice bath.
3. Add fava beans to pot and cook until crisp-tender, about 1 minute.
4. Transfer fava beans to ice bath and allow to chill for 1 minute.
5. Carefully peel off and discard the outer skin from each bean.
Preparing the Carrots
1. Scrub carrots under cold running water & rinse greens.
2. Using a sharp knife, a vegetable peeler, or a mandoline, very thinly slice carrots on a strong bias.
3. Transfer carrot slices to ice bath and set aside.
Preparing the Salad
1. In a large bowl, whisk together olive oil, lemon juice, and lemon zest.
2. Add fava beans and shallot.
3. Carefully dry carrots and greens and add to bowl.
4. Toss to combine and season to taste with salt and pepper.
Serving the Salad
1. Spread ricotta over the bottom of a serving plate and top with dressed vegetables.
2. Serve with toast.
3. Drizzle with more olive oil just before serving.
