- 4 tbsp Milk
- 1 tbsp Flour
- 0.75 c Milk
- 1.5 tsp Active dry yeast
- 3 c All purpose flour
- 2 tbsp milk powder
- 0.25 c Sugar
- 1 Large egg, room temp
- 5 tbsp Butter, softened, divided into 2 parts
- 0.5 tsp Salt
Original Glaze
- 1.5 c Powdered sugar
- 3 tbsp Milk
Chocolate Glaze
- 0.75 c Chocolate chips
- 1 tbsp Oil
Cinnamon Sugar
- 3 tbsp Sugar
- 1 tsp Cinnamon

Make the tangzhong
1. Mix the flour and milk in a nonstick pan over medium heat until they form a thick paste.
Mix tangzhong with other ingredients
1. Mix tangzhong with cold milk, yeast and sugar, and rest for 10 min to activate the yeast.
2. Add all the other ingredients except half of the butter.
3. Knead for 5 minutes at medium speed.
4. Add the remaining butter and knead again for another 5-7 minutes until a smooth dough has formed.
Let the dough rise
1. Cover and let it rise for 60-90 min in a warm place until it doubles in size.
Roll out and cut the dough
1. Roll out into a 1 cm thick circle.
2. Cut out the donuts (~3.5” diameter) and holes.
3. Gather the dough scraps into a ball and roll out again, repeating until the dough is used up.
Rest the donuts
1. Place the donuts in a tray and let them rest for 30 minutes.
Fry the donuts
1. Heat 2 inches of oil in a wok.
2. Once it reaches 350F, turn the heat to medium low, and fry donuts 3 at a time for about 45-60s seconds per side.
3. Fry the holes for about 90s.
Make the original glaze
1. Mix all ingredients.
Make the chocolate glaze
1. Melt the chocolate and mix in the oil.
Mix the sugar and cinnamon
1. Mix the sugar and cinnamon.
Dip the donuts in the glazes and roll the holes in the cinnamon sugar
1. While still warm, dip your donuts one by one into the glazes, and roll the donut holes in the cinnamon sugar.
1. These are BEST if you eat them fresh.
