- 3 Tomatoes
- 1 White onion
- 4 Garlic cloves
- 4 mini peppers
- 1 tbsp Chili powder
- 1 tbsp Garlic powder
- 1 tbsp Kosher salt
- 1 tbsp sazon
- 1 Lemon, juiced
- 0.25 c Red wine vinegar
- 0.5 c Avocado oil

1. Start by preheating your oven to 375° F.
Making the Marinade
1. In a food processor, place tomatoes, white onion, garlic, peppers and seasonings.
2. Turn on your food processor so that it is in puree mode.
3. While the food processor is going, add lemon juice, red wine vinegar, and avocado oil.
Marinating the Chicken
1. Place your chicken into a Ziploc bag or a bowl. And pour your marinade over the top of the chicken.
2. Let your chicken marinade for one to two hours or up to 24 hours overnight in the refrigerator.
Baking the Chicken
1. Once your chicken has marinated, remove it from the bag and place it in an oven safe baking dish. Make sure that the marinade is still spread evenly over the chicken.
2. Bake for 25 minutes covered with foil.
3. Remove foil for the last half of cooking for another 20 minutes.
4. Check the internal temperature of the thigh with a thermometer to make sure that it has reached 165° F before serving.
5. If it has not reached that temperature, continue to cook your chicken in the oven.
1. Serve with your favorite starch or side dish and enjoy!
