- 2 pounds Chicken breast, boneless skinless
- Kosher salt
- 1 Onion, diced
- 1 bell pepper
- 2 Tomatoes, sliced
- 4 clove Garlic, minced
- 1.5 cups Rice, rinsed
- 1 bunch Fresh mint
- 6 Limes, juiced

Preparing the Chicken
1. Cut the pieces into chunks and place in a large pot.
2. Fill with cold water, about 2-inches above the chicken.
3. Season with a bit of salt and cook over medium heat until the chicken is almost done.
4. Remove any scum or foam that builds.
Adding the Vegetables and Rice
1. Stir in the onion, bell pepper, tomatoes and garlic.
2. Cook over low heat until the veggies have softened.
3. Stir in the rice, mint, lime juice and a teaspoon of salt.
4. Cook, stirring often, until the rice has softened.
5. Add more water as needed.
Serving the Dish
1. Serve with avocado, tortillas and lime wedges.
2. Enjoy!
