Ingredients

Bread
- 400 g Bread flour
- 7 g Active dry yeast
- 35 g Olive oil
- 260 g Warm water
- 15 g Salt
- 25 g Sugar
Tuna Tartare
- 0.5 lb fresh tuna
- 2 tbsp Olive oil
- 0.5 Shallot, finely diced
- 1 fresno chili
- 4 Cherry tomatoes, chopped
- 2 tbsp Chives, chopped
- Fresh basil, for garnish

Directions

Making French Bread
1. Combine warm water, yeast, and sugar in a cup and mix to combine
2. Add flour, salt and olive oil to a large mixing bowl and mix well
3. Pour yeasty water into the flour and mix to create a shaggy dough
4. Knead on a floured surface for 10-12 minutes until gluten has developed and you can pull the dough without it tearing easily
5. Cover with a towel and let ferment for at least an hour
6. Divide into two large bowls. Cover and let rest for 10 minutes
7. Flatten them out and roll them up into 8-10 inch rolls. Cover and let ride for 45 minutes to an hour
8. Score and brush with egg whites and a splash of milk or water
9. Bake at 400F for 15 minutes
10. Let cool then slice into half inch thick rounds, coat with olive oil or butter and toast
Tartare
1. Slice raw tuna into little cubes
2. In a mixing bowl, combine tuna, shallots, chilies, truffle salt, black pepper, cherry tomatoes, and chives and mix
3. Put the tartare mixture on toasted French rounds and top with optional spicy mayo or an egg yolk along with some slivers of fresh basil and enjoy!
