Ingredients

Salad
- 4 cups Watermelon, cubed
- 0.5 Cucumber
- 0.5 c Fresh basil leaves
- 0.5 Red onion
- 1 Lemon, juiced
- 0.5 tsp Salt
- 0.5 tsp cracked pepper
Tofu Feta
- 6 oz firm tofu
- 0.25 c Olive oil
- 1 tsp miso paste
- 1 tbsp Nutritional yeast
- 1 tbsp Dried oregano
- 1 tbsp Apple cider vinegar

Directions

For the tofu feta
1. Begin by making the tofu feta (ideally one day or a few hours in advance).
2. Press the liquid out of the tofu and cut it into cubes.
3. In a jar, mix all the other tofu feta ingredients and add the tofu cubes.
4. Shake to make sure the tofu is well coated.
For the salad preparation
1. Thinly slice the red onion.
2. Massage with lemon juice and salt.
3. Set aside.
4. Chop watermelon and cucumber into cubes.
5. Chiffonade the basil by stacking the basil leaves.
6. Roll them up tightly and cut into thin stripes.
For the salad assembly
1. On a plate, arrange the watermelon and cucumber and top with the basil and the red onion with its juice.
2. Add the tofu feta with the oil and use it as the dressing.
3. Enjoy!
