- 1 onion
- 0.5 bell pepper
- 1 zucchini
- 8 shrimp
- 2 eggs
- 1 Thai chili
- 10 Thai basil leaves
- 4 clove Garlic, divided
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 2 tbsp sweet soy sauce

Preparation of Ingredients
1. Spiralize a zucchini (or buy pre-spiraled zucchini noodles).
2. Slice your bell pepper and onion into slivers.
3. Mince your garlic, reserving half for the sauce and half for sautéing.
4. In a small bowl, add half of the minced garlic, the Thai basil, Thai chili, oyster sauce, fish sauce, and sweet soy sauce. Mix to combine.
Cooking the Zoodles
1. In a pan, add oil and your zucchini noodles / zoodles. Sauté until the zoodles release water and have softened.
2. Remove zoodles from pan and place in a fine sieve, to allow more water to strain out. Feel free to also gently squeeze the water out of the zoodles.
3. In a pan, add oil, your onions and bell peppers. Sauté until slightly softened.
4. Add the rest of your minced garlic and sauté.
5. Add your eggs and allow to set before lightly scrambling.
6. Add in your shrimp and allow them to cook for a few minutes before adding back the zoodles.
7. Add the sauce and toss to combine. Enjoy immediately.
