Ingredients

Shrimp and Vegetables
- 1 lb jumbo shrimp
- 3 purple sweet potatoes
- 3 tbsp heavy cream
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 shallot
- 6 cloves Garlic
Grits
- 1.25 c grits
- 5 c chicken broth
- 1 c heavy cream
- 4 tbsp butter
- 1 c pepperjack cheese
Seasoning
- 1 tbsp kosher salt
- 1 tbsp white pepper
- 2 tbsp Garlic powder
- 2 tbsp onion powder
- 2 tbsp chili powder
Canned Vegetables
- 1 15 oz can corn
- 1 14 oz can diced tomatoes

Directions

Prepare the sweet potatoes
1. Peel your sweet potatoes then cut them into fine cubes.
2. In a large pot with boiling water, add the sweet potatoes.
3. Cook them until slightly softened, about 30 minutes.
4. In a blender, add the sweet potatoes and the 3 tbsp of heavy cream.
5. Mix until it forms a puree. If needed, add a little more cream until the potatoes are finely pureed.
Prepare the grits
1. In a large pot, add chicken broth and cook on medium heat.
2. Once it heats, add the grits and cook on medium-low to simmer.
3. Stir in the heavy cream and cook for about 10-15 minutes, continuously stirring until your grits form to your liking.
4. Add salt and pepper to taste.
5. Remove from the heat and add the cheese and stir.
Prepare the shrimp
1. Season your shrimp with kosher salt, pepper, garlic and onion powder, and chili powder.
2. In a large pan, add olive oil and cook your shrimp for about two minutes, removing from the pan once it begins to develop a sear.
Prepare the vegetables
1. Add the peppers, minced garlic, shallots, corn, and tomatoes to the pan. Cook until the vegetables soften.
2. Add the shrimp and mix.
Assemble and serve
1. Assemble your plate with your grits first, then your maque choux shrimp blend.
2. Serve and enjoy!
