For the tuna
- 1 Tbs Olive oil, (you can use the oil in the tuna can)
- 2 clove Garlic, chopped
- 0.5 Onion, sliced
- 150 g Mushrooms, sliced
- 3 can tuna
- 0.5 tsp Dried thyme
- 0.5 tsp Dried basil
- Pinch of salt and fresh black pepper
- 0.25 cup Sun-dried tomatoes
For the polenta
- 2 cup Water
- 0.5 cup Polenta, pre-cooked
- pinch Salt
- 0.25 cup Parmesan cheese, grated
- 1 Tbs Butter

For the tuna
1. Heat the oil in a pan and add the onion and garlic; cook until they soften. Add the mushrooms, canned tuna and herbs. Cook while stirring to prevent the tuna from falling apart and season with salt and pepper. Stir in the tomatoes and keep warm to the side.
For the polenta
1. Bring the water to a boil and add the polenta and salt. Lower the heat all the way down and cook while stirring until the polenta absorbs all the water and thickens. Remove from the fire, add the cheese and butter and mix in. Divide the polenta in different bowls and serve the tuna with tomatoes. Garnish with more cheese and fresh basil.
