- 60 gluten-free linguine
- 130 g jumbo raw prawns
- 1 clove Garlic
- 1 Shallot
- 1 tsp cajun spices
- 0.5 c Spinach
- 4 Cherry tomatoes
- 1 tbsp Tomato paste
- 40 g light ricotta cheese
- 1 tbsp light cream cheese
- 1 tbsp Parmesan
- 1 tsp Parsley, chopped
- 1 lemon wedge

1. Cook pasta according to packet instructions.
2. Finely chop the garlic and shallot.
3. Add garlic and shallots to a nonstick pan followed by the prawns and Cajun spices.
4. Cook prawns for 2 minutes on each side.
5. Add the tomatoes, tomato paste, 1/2 cup pasta water, ricotta, cream cheese, parmesan, spinach and stir for 3-5 minutes or until thickened.
6. Add more pasta water if it is too thick.
7. Add pasta to the sauce and stir.
8. Serve with parsley and a lemon wedge.
