- 4 Sweet potatoes, peeled and sliced
- 1 Tbs Olive oil
- 0.5 cup Parmesan cheese, shredded
- 2 Tbs Fresh rosemary
- 2 tsp Salt
- 1 tsp Black pepper
- 1 tsp Paprika
- 1 tsp Garlic powder
- 1 tsp Onion powder
Spicy Mayo
- 0.25 cup lite mayo
- 2 Tbs Sriracha

1. Preheat oven to 400F degrees. Line a large baking sheet with parchment paper.
2. Peel and slice sweet potatoes into fry shape pieces. Transfer fries to a large bowl. Add olive oil, salt, black pepper, parika, garlic and onion powder to the fries and toss until fries are evenly coated.
3. Place fries on a baking sheet and make sure to spread them out.
4. Bake for 30-35 minutes until potatoes are crispy.
5. Remove from oven and top with freshly grated parmesan cheese and fresh rosemary. Serve with homemade spicy mayo (mix together spicy mayo and sriracha in a bowl). Enjoy!
