Ingredients

Pan Seared Chicken
- 3 Chicken breast, pan seared
Seasoning for Chicken and Vegetables
- 2 tsp Cumin
- 2 tsp Onion powder
- 2 tsp Garlic powder
- 1 tsp Paprika
- 1 tsp Chili powder
- 1 tsp Kosher salt
Additional Ingredients
- 2 c Canola oil
- 12 Wonton wrappers
- 1 Red bell pepper, diced
- 1 Green bell pepper, diced
- 1 jalapeno
- 0.5 c Corn
- 0.5 c Black beans, drained
- 1 c Spinach, fresh chopped
- 2 clove Garlic, minced
- 0.5 Lime, squeezed
- 2 c pepper jack cheese

Directions

Preparing the Filling
1. To a skillet over medium heat add 2 tbsp olive oil.
2. Add in bell peppers and jalapenos.
3. Cook for 3 minutes until tender.
4. Add in corn and beans.
5. Add seasoning and lime juice to this mixture.
6. Add in your garlic, spinach and cooked chicken.
7. Mix until spinach wilts.
8. Set this mixture aside and let it cool before adding it to the wonton wrappers.
Wrapping the Wontons
1. Set up your wonton wrapper so it looks like a diamond facing you.
2. Use a pastry brush to wet the edges with water.
3. Fill with a scoop of your mixture and some cheese, then wrap it up.
4. Don’t wrap too tightly!
5. Seal with water on the outside.
Frying the Wontons
1. Heat oil to 350 F.
2. Place wonton in oil seam side down and cook until golden brown.
3. Flip so all sides get crispy.
4. Dip in your favorite sauce and ENJOY!
