- 1 tbsp Fresh thyme, chopped
- 4 tbsp fresh Italian parsley
- 3 tbsp Extra virgin olive oil
- Kosher salt, to taste
- Pepper, to taste
- 0.5 tbsp Tabasco
- 8 lamb chops

Prepare the Herbs
1. Strip the rosemary and thyme leaves from the branches, finely chopping them along with the Italian parsley.
Blend Ingredients
1. In a food processor or blender, combine the chopped herbs with extra virgin olive oil, kosher salt, pepper, and Tabasco.
2. Blend until you achieve a smooth marinade consistency.
Marinate the Lamb
1. Place the lamb chops in a suitable container or resealable bag.
2. Pour the herb marinade over the lamb and rub it in, ensuring the meat is well-coated.
3. Cover and refrigerate for optimal marination, letting it sit for 4-24 hours to infuse flavors and tenderize the lamb.
Cook the Lamb
1. When ready to cook, remove the lamb from the refrigerator and bring it to room temperature.
2. Grill, roast, or cook the lamb according to your preference until it reaches your desired level of doneness.
Prepare Additional Sauce
1. In the same skillet used to cook the lamb, add 2-3 tablespoons of butter over medium-high heat.
2. Pour in 1/2 cup of beef stock.
3. Scrape the flavorful bits from the bottom of the pan while stirring for 1-2 minutes, creating a delicious sauce.
1. Drizzle the prepared sauce over the cooked lamb chops.
2. Garnish with additional fresh herbs if desired.
