Ingredients

Lamb Chops
- 10 lamb chops
- 0.333 c Fresh parsley, large stems removed
- 1 tbsp Fresh thyme leaves, or 1/2 tbsp of dry
- 2 rosemary sprigs
- 6 Mint leaves
- 6 clove Garlic
- 1 Shallot, diced
- 1 tsp Allspice
- 1 tsp Salt
- 1 tsp Pepper
- 1 tbsp Lemon juice, freshly squeezed
- 0.5 c Olive oil
Sauce
- 4 tbsp Unsalted butter
- 0.5 c beef stock

Directions

Instructions for Lamb Preparation
1. Let the lamb sit out until it reaches room temperature (approximately 30 minutes).
2. Blend all ingredients (except for the butter and beef broth) in a food processor/blender or immersion blender.
3. Pour marinade over lamb and rub it in. Cover and refrigerate for 4-24 hours. If you’re in a rush, cooking these immediately is ok as well.
4. In a large pan (preferably cast iron) on high heat, sear lamb chops on each side for 3 minutes for a medium or until they reach 130-135 degrees internal. Or cook them to your desired doneness.
5. Remove from the pan and let them rest on a cutting board or wire baking rack for 5 minutes.
Additional Sauce for Lamb
1. Using the same skillet as you cooked the lamb in, turn the heat down to medium-high and add 2-3 tablespoons of butter and 1/2 cup of beef stock.
2. Scrape the bottom of the pan while stirring for 1-2 minutes max and let the stock cook for another 3 minutes then remove from heat.
3. Pour the sauce over the lamb chops and enjoy.
