- 1 box jiffy corn bread mix
- 1 Sweet potato
- 2 tbsp Butter
- 2 Eggs
- 0.333 c Milk
- 0.5 c Brown sugar
- dash Cinnamon

Preparing the Sweet Potatoes
1. Start off with cutting the ends of your sweet potatoes and slicing one line down the middle not all the way through.
2. Then poke a few holes with a fork around the entire potato.
3. Heat in the microwave for 7-9 minutes until fork tender.
4. Remove from microwave and carefully remove skin.
5. Add to a bowl and mash.
6. Add in your butter and mix together until potatoes are smooth and butter is melted.
7. Add in your sugar, milk, eggs, and Jiffy mix and mix until it is all well combined.
Baking the Sweet Potatoes
1. Add to an oven-safe dish and bake at 350F for 15-20 min until done!
Serving the Sweet Potatoes
1. Serve with some honey butter and enjoy.
