Ingredients

Sauce
- 2 tablespoons Honey
- 2 teaspoons Soy sauce
- 1 tablespoon water
- 2 cloves Garlic, minced or grated
- 0.5 Lemon, juiced
Salmon
- 2 filets wild caught salmon
- pinch Salt
- pinch Black pepper
- 1 teaspoon Smoked paprika
- 1 tablespoon Avocado oil, can sub butter or olive oil
Vegetables
- 1 honeynut squash cubed
- 4 heads baby bok choy
- 1.5 tablespoons Oil, divided
- 1 teaspoon Salt, divided
- 1 teaspoon Garlic powder, divided

Directions

Preparation
1. Preheat oven to 400 degrees.
2. Mix together honey garlic sauce.
3. Add salmon bites to a bowl and pour sauce over them.
4. Toss to combine and marinate for at least 15 minutes.
Roasting the Squash
1. Add honey nut squash to a sheet pan lined with parchment paper.
2. Toss in ½ tablespoon oil, ½ teaspoon salt, ½ teaspoon garlic powder and black pepper to taste.
3. Roast honey nut squash for 20 minutes.
Adding Bok Choy and Salmon
1. Add bok choy to the sheet pan with the squash and coat with the remaining oil, salt, pepper and garlic powder.
2. Add salmon to the sheet pan.
3. Bake for 10-12 minutes, until salmon is cooked through.
Serving
1. Serve with grain of choice (I went with coconut rice) and enjoy.
