Brownie Ingredients
- 115 g Dark chocolate, 60-70% cocoa
- 10 tbsp Unsalted butter, 140g
- 0.75 c Sugar, 170g
- 2 Eggs, room temp
- 1 tsp instant coffee
- 0.5 c All purpose flour, 65g
- 0.333 c Cocoa powder, 30g
- 0.75 tsp Salt
- 8 oz Cream cheese, 225g
- 0.333 c Sugar, 75g
- 0.25 tsp Salt
- 0.25 tsp vanilla
- 1 Large egg
- 0.333 c Heavy cream, 80g
- 1 tsp Cornstarch
- 150 g dark or semi sweet chocolate
- 120 g Cream
- white chocolate

1. Preheat your oven to 340F and line a 9x9 pan.
Cheesecake Preparation
1. Whisk the cream cheese until it’s creamy.
2. Add sugar and whisk until combined.
3. Then add the egg and mix until just incorporated.
4. Last mix in the cream, salt, vanilla and corn starch, taking care not to overmix.
5. Set aside.
Brownie Preparation
1. Melt the dark chocolate and butter in the microwave in 20s increments.
2. Whisk the eggs and sugar until they are light and frothy.
3. Add in the chocolate mix and combine.
4. Then add the coffee mix and combine.
5. Lastly fold in the dry ingredients gently.
6. Pour the brownie batter into the pan.
7. Spread evenly and then carefully pour the cheesecake batter.
8. You can form swirls if you like but I also like clean layers.
9. Bake for about 25 min until you can see the edges are set.
10. Center will still be a little wobbly.
11. Let cool down at room temperature followed by 3-4 hours in the fridge.
12. Top off with warm ganache and chill for another 15 min.
13. Serve & enjoy! These are best kept cold.
