- 6 Eggs, room temperature, yolk and whites apart
- 6 Tbs granulated sugar substitute
- 4 Tbs oatmeal flour
- 3 Tbs potato starch
- 2 tsp Baking powder
- 3 Tbs powdered sugar substitute
- 0.5 cup unsweetened spreadable chocolate

1. Pre-heat your oven to 180ºC/350ºF.
2. Beat the egg whites on high speed until it forms stiff peaks. Add the sugar substitute slowly sprinkling it while beating at low speed. Keep beating until you get a firm and bright meringue. In a separate bowl, beat the egg yolks until completely homogenous. Mix with the meringue carefully to prevent it from losing air.
3. With a sieve, sift the flour, potato starch and baking powder into the mixture. Fold in the dry ingredients carefully.
4. With a spoon, form small mounds in a baking tray lined with parchment paper or lightly greased.
5. Bake for 12 minutes or until golden and firm. Remove from the oven and while they’re still hot, powder with powdered sugar substitute until completely covered.
6. Let them cool and assemble them with some spreadable chocolate in the middle.
7. Share and enjoy.
