- 4 oz Pancetta, diced
- 2 tbsp mayo
- 1 tsp vinegar
- 6 Large eggs, hard boiled
- 6 tbsp Parmesan cheese, finely shredded
- Salt, to taste
- Pepper, to taste
- Parsley, to garnish

For the Parmesan Crisps
1. Place multiple 2 inch circles of Parmesan cheese on a baking mat.
2. Bake in the oven at 300 degrees for 10-15 minutes until crisped together.
For the Pancetta
1. Cook pancetta in a medium-sized pan over medium heat until crispy.
2. Save the fat and put pancetta crisps on a paper towel-lined plate.
For the Egg Yolk Mixture
1. Add egg yolks to a bowl.
2. Add mayo, vinegar, salt, pepper and 1 tablespoon of the pancetta fat and mix well.
3. Add to a piping bag.
For Assembling the Eggs
1. Pipe the egg yolk mixture into your half-sliced hard-boiled eggs.
2. Top with a few pieces of crispy pancetta, some pepper, salt, and parsley.
3. Add a Parmesan crisp to it and serve.
