Ingredients

- 8 oz Bacon
- 1 tsp Black pepper, for fish seasoning
- 2 tsp Black pepper, or to taste

- 1 tsp Garlic powder, or to taste

- 2 cup Heavy cream
- 1 tsp Italian seasoning
- Kosher salt, to taste

- 2 Tbs Olive oil, divided
- 1 Red pepper, Sliced
- Red pepper flakes, optional
- 0.5 tsp Smoked paprika
- 0.5 tsp Smoked paprika, for fish seasoning
- 1 Tbs Tomato paste
- 1 Tbs Unsalted butter
- 1 Medium Sweet Onion
- 1 cup Chicken Broth
- 2 lb Cod

Directions

1. Clean and pat dry cod filets. Season with salt, black pepper, garlic powder, and smoked paprika. Broil with olive oil for 7-10 minutes or until done.
2. In a skillet on medium heat, add half of the olive oil. Add bacon and cook bacon until done & crispy, then set aside.
3. In the same pan, add unsalted butter and remaining olive oil. Once butter is melted, add in diced onions and cook for about 1 minute. Add in sliced red bell peppers and cook for about 3 minutes. Add in minced garlic and cook for about 30 seconds to 1 minute.
4. Add in spices: black pepper, garlic powder, Italian seasoning, and smoked paprika. Mix in well. Add in chicken broth to deglaze the pan and scrape bits that may be on the pan. Add in tomato paste and mix in well.
5. Add in heavy cream and bring to a simmer for about 5 minutes, until sauce thickens. Remove from heat and allow sauce to cool down for about 2 minutes to continue to thicken. Dice cooked bacon and add it into sauce, then season with salt to taste. Add sauce over cod.
