- 0.5 c Unsalted butter, 113g
- 0.25 c Sugar, 50g
- 0.25 c packed brown sugar
- 2 Eggs, room temp
- 3 large ripe bananas
- 1 c All purpose flour, 140g
- 0.5 c Whole wheat flour, 75g
- 1 tsp Baking soda
- 0.5 tsp Salt
- 0.5 tsp Cinnamon
- 1 tsp Coffee, + 1 tbsp hot water
- 1 c chopped walnuts

1. Preheat oven to 350F and prepare loaf pan with butter / parchment.
2. Melt the butter over medium heat until it becomes brown & gives off a nutty aroma. Remove and let cool for 10 min.
3. Whisk the butter with the two types of sugar for 1 min. Add the eggs and whisk at high speed for 3 min until mix becomes frothy.
4. Add in the bananas and whisk them (the mixer should mash them, but you can also mash them yourself).
5. Add the coffee mixed with water and whisk in.
6. Fold in the dry ingredients gently, then fold in the walnuts.
7. Transfer to loaf pan, decorate however you’d like, and bake for about 45-50 min until a toothpick comes out with moist crumbs attached.
8. Let cool & serve! I love to eat this by warming a slice for 5-10 seconds and smearing with peanut butter.
