Ingredients

Pork Spare Ribs
- 1.5 lb pork spare ribs
- 5 Garlic cloves, minced
- 1 tbsp Lemongrass, minced
- 1.5 tbsp Fish sauce
- 0.5 tbsp chicken powder
- 0.5 tbsp Sugar, plus 2 tbsp to caramelize
- 0.5 tbsp Dark soy sauce

Directions

Preparation of Spare Ribs
1. In a small pot, add your spare ribs and fill the pot with enough cold water to cover the spare ribs.
2. Bring that pot to a boil on high heat for about 5 minutes or until the water starts to boil.
3. Drain and clean your spare ribs with clean water to remove any impurities.
4. Pat dry and set aside.
Marinating the Spare Ribs
1. In a mixing bowl, add your spare ribs and marinate with fish sauce, lemongrass, chicken powder, 1/2 tsp sugar, garlic, and dark soy sauce.
2. Allow to marinate for at least 1 hour (or overnight is best).
Cooking the Spare Ribs
1. In a pot, add 2 tbsp of oil and 2 tbsp of sugar on medium-high heat.
2. Allow the sugar to melt and start to caramelize and turn a dark brown color (but not burnt!).
3. Once the sugar has turned a dark brown caramel color, add your marinated spare ribs.
4. Stir to combine quickly for 30 seconds.
5. Add enough water to cover half the ribs.
6. Lower the heat to simmer.
7. Simmer for 30 minutes - make sure you stir every 5 mins for the ribs to cook evenly.
Garnishing and Serving
1. After 30 minutes, the liquid should have reduced.
2. Garnish with green onions and turn off the heat.
3. Serve hot with a side of rice.
