- 0.5 tsp Cinnamon
- 2 Tbs Dark brown sugar
- 1 Egg yolk
- 2 Tbs Granulated white sugar
- 1 cup Heavy cream
- 2 Large eggs, whole
- Maple syrup, Optional
- 0.5 tsp Nutmeg
- Powdered sugar, Optional
- 0.5 cup Sweet potato, cooked and mashed, then cooled
- Unsalted butter
- 1 tsp Vanilla extract
- 1 loaf Brioche Bread

1. For custard, in a bowl, combine heavy cream, white sugar, brown sugar, cinnamon, nutmeg, cooled sweet potato, vanilla extract, and eggs. Whisk all ingredients until combined and smooth.
2. Heat a pan to medium heat. Add about 1 Tablespoon of butter to the pan for each batch of French toast cooked. Be sure to not have the pan too hot, as it can burn the butter.
3. Quickly dip each piece of bread into custard. Be sure that the sweet potato bits are at the top of the custard before you dip, to ensure the sweet potato sticks to the bread. Give the custard a mix before dipping.
4. Add bread to the pan and cook for about 2 minutes on each side or until golden brown and crispy.
