Cake Ingredients
- 120 grams Dark chocolate, 70%
- 90 grams Butter
- 45 grams Brown sugar
- 2 Eggs
- 2 Egg yolks
- 35 grams Flour
- 10 grams Cocoa powder
Matcha Lava ingredients
- 75 grams Heavy cream
- 100 grams white chocolate
- 1 tsp matcha powder

1. Simmer the heavy cream for the matcha lava. Once simmering, pour over the chopped white chocolate and let sit for 5 minutes.
2. Mix well until it is smooth. sift in the matcha and mix well until the mixture is homogeneous.
3. Put into dome molds and let set in the fridge until firm.
4. For the cake, melt butter and chocolate together over simmering water and mix continuously. Let cool.
5. Whip the brown sugar, eggs and egg yolks together until they are lighter in colour and they have doubled in size.
6. While whipping, pour in the chocolate butter mixture. Once it has been mixed through, stop mixing. Sift the dry ingredients into the mixture and fold gently.
7. Scoop cake batter into 4 buttered ramekins, leaving some space at the top. Place a matcha done in the middle of the cake batter. Bake at 400F for 11 minutes. Serve within 15 minutes with ice cream on top!
