Ingredients

For the minced beef
- 1 lb Ground beef
- 2 Tbs Garlic powder
- 2 Tbs Onion powder
- 2 tsp Smoked paprika
- 1 tsp Cayenne pepper
- 2 tsp cumin powder
- 1 tsp Ground ginger
- 1 tsp Browning
- 1 Tbs pimento
For the marinade
- 0.25 cup Water
- 2 jalapenos
- 4 Scallions, chopped
- 1 Red bell pepper, chopped
- 1 Green bell pepper, chopped
- 1 Yellow onion, chopped
- 5 Garlic cloves
- 1 cubanelle pepper, (optional)
- 1 scotch bonnet pepper
- 3 Carrots, roughly chopped
- 4 Thyme, twigs
- 0.25 cup Hot sauce
- 0.25 cup Soy sauce
For the dough
- 2 cup All purpose flour, sifted
- 1 butter stick
- 1 tsp Granulated sugar
- 1 tsp Kosher salt
- 1 Tbs Turmeric
- 1 Tbs Curry powder
- 0.5 cup Water, ice cold
For the toppings
- 1 cup Tomatoes
- 0.5 cup diced jalapenos
- 1.5 cup pepper jack cheese
- 1 cup Cheddar cheese
- 0.5 cup Tostitos queso
- Sour cream
- Oil

Directions

1. Directions
For the marinated meat
1. Add all of the marinade ingredients to a blender.
2. Pulse until all well combined.
3. Pour the marinade over the meat and add half the mentioned seasonings to the mixture.
4. Let sit for an hour covered and refrigerated.
For the dough
1. Cut the butter half. Keep both pieces in the freezer until ready to use.
2. Add sifted flour to a food processor.
3. Cut one half into cubes and add to the food processor.
4. Pulse until slightly blended.
5. Add mixture to a large bowl.
6. Add salt, sugar, turmeric, and curry powder.
7. Mix until incorporated.
8. Gradually add ice water and mix with a plastic spatula or spoon.
9. Once the dough starts to come together, use your hands to knead the dough.
10. Once the dough comes together, wrap in plastic wrap and refrigerate for at least 30 minutes.
11. Remove the dough from the refrigerator.
12. Roll your dough out into a rectangle.
13. Use a cheese grater and grate the butter onto the dough.
14. Fold the dough over itself and repeat the process two more times.
15. Take the folded dough and wrap it back in plastic wrap.
16. Set back in the fridge for about 20 minutes.
To finish
1. Get a large skillet to medium heat.
2. Add your minced marinated meat to the pan and begin to cook.
3. Drain the meat and bring it back to the pan.
4. Add remaining seasonings and browning to the pan.
5. Stir and remove from the heat. Let cool.
6. Place oil in a heavy bottom pot and heat until it reaches 365 degrees.
7. Remove the dough from the fridge and roll the dough out.
8. Cut the dough into nachos,
9. Once your oil is hot, add the nachos to the oil and fry until perfectly golden brown.
10. Drain the nachos on a paper towel.
11. Once drained, add the beef to the nachos as well as the queso and the cheese. Place it under a broil until the cheese fully melts.
12. Add the remaining toppings.
13. Serve and enjoy!
