Main Ingredients
- 1 c Rolled oats
- 0.5 c plant milk
- 0.5 c pumpkin purée
- 0.5 tsp Baking powder
- 1 tsp Vanilla extract
- 8 Medjool dates
- 1 tsp Cinnamon
- 0.25 tsp Ginger powder
- 0.125 tsp Cloves
- 0.125 tsp nutmeg or allspice
- 0.25 c unsweetened chocolate chips
Date Caramel Drizzle
- 0.333 c date paste
- 2 tbsp water, to a pourable consistency
- 0.25 tsp Vanilla extract

1. Preheat the oven to 350 F.
Blend Your Ingredients
1. Combine all ingredients in a blender except for baking powder.
2. Blend until smooth.
3. Add baking powder and blend shortly to combine.
4. Pour batter into a parchment-lined pan/ramekins of choice. I used two 6-inch ceramic bakeware.
Bake It
1. Bake for 25-30 (check at 18 minutes if using ramekins or other small bakeware) or until a toothpick inserted in the middle comes out clean or with a few crumbs.
Prepare Date Drizzle and Serve
1. Add date paste and vanilla to a bowl and whisk.
2. Slowly add water to adjust consistency.
3. Drizzle with date caramel.
