- 1 loaf Brioche Bread
- 2 Large eggs
- 1 Egg yolk
- 5.5 cup Heavy cream
- 2 tsp Vanilla extract
- 2 Tbs Granulated white sugar, or more if desired
- 2 Tbs Dark brown sugar, or more if desired
- 1 tsp Cinnamon
- 0.5 tsp Nutmeg
Strawberry Sauce
- 1 lb Strawberries, thinly sliced
- 0.33333333333333331 cup Granulated white sugar
- 1 Tbs Fresh lemon juice

1. Preheat the oven to 350 F.
2. Slice Brioche Bread into ½ inch pieces and add to a bowl
3. In a separate bowl, add in Eggs, Egg Yolk, Heavy Cream, White Sugar, Brown Sugar, Cinnamon, Nutmeg and whisk until fully combined. You can add more white & brown sugar if you desire. The amount provided takes into account the use of the strawberry sauce and/or other sweeteners used as a topping such as maple syrup.
4. Pour liquid mixture over bread and fold until all bread is covered. Set aside for 30 minutes to soak.
5. For strawberry sauce topping, clean, hull, and slice strawberries. in a skillet or saucepan on medium heat, combine strawberries, ⅓ cup white sugar, and lemon juice. Lightly stir occasionally and bring to a simmer. Do not mash strawberries as they will naturally release juice as they cook. Low simmer strawberries for about 15-20 minutes or until sauce is thickened. Once done, remove from heat and let cool to room temperature. Sauce will continue to thicken as it cools.
6. Spray a 9x13 baking dish or baking dish of choice with non-stick cooking spray or line with parchment paper. Fill the baking dish with bread evenly. Next, add crumble topping on top of bread evenly.
7. Bake for 25-30 minutes, or until the edges have set and the top of the french toast is golden brown.
8. Apply the strawberry sauce to the cooked french toast, as you desire.
