- 2 small heads of garlic
- Olive oil
- Bay leaf, optional
- 400 g ground pork-beef
- 1 large red onion
- 150 g sliced olives
- Pepper, to taste
- 0.5 tbsp Chili flakes
- 1 bottle Tomato sauce, approx. 1,5 cups
- 200 ml cooking cream
- 500 g orecchiette pasta

Preparation of Garlic
1. Preheat your oven to 180°C (350°F).
2. Cut the garlic in half (2 small heads or 1 large head), drizzle with olive oil, sprinkle with salt, and optionally add a bay leaf.
3. Wrap the garlic in foil and bake in the preheated oven for 45 minutes.
Preparation of Meat Mixture
1. While the garlic is baking, heat olive oil in a pan over medium heat.
2. Add the ground pork-beef, chopped red onion, and sliced olives to the pan.
3. Season with salt and pepper.
4. Sprinkle half a tablespoon of chili flakes on top.
5. Fry the mixture for 8-10 minutes or until the meat is browned and the onions are translucent.
Combining Garlic and Meat Mixture
1. Once the garlic is roasted, squeeze the softened cloves into the pan with the meat mixture.
2. Add a bottle of tomato sauce to the pan, followed by 200ml of cooking cream.
3. Stir the ingredients together, ensuring the sauce is well combined.
4. Allow the sauce to simmer over low heat for an additional 10-15 minutes, allowing the flavors to meld.
Preparation of Pasta
1. While the sauce is simmering, cook the orecchiette pasta according to the package instructions.
2. Drain the pasta once it's al dente.
Final Steps
1. Mix the cooked pasta with the prepared sauce, ensuring it's evenly coated.
2. Serve the Orecchiette Pasta hot, garnished with fresh herbs or grated Parmesan cheese if desired.
