Shrimp Lasagna
- 1 lb Shrimp
- 3 clove Garlic, crushed
- Tony's seasoning
- 2 tsp Onion powder
- 2 tbsp Italian seasonings
- 2 c Ricotta cheese
- 1 Egg
- White cheddar cheese
- 2 c Heavy cream
- 1 c pasta water
- 6 tbsp Butter
- 8 lasagna noodles
- 0.5 c Parmesan
- 1 c Spinach

Seasoning the Shrimp
1. Season your shrimp with Tony's, onion powder, and Italian seasonings.
2. In a skillet set to medium heat, add two tablespoons of butter and a drizzle of olive oil.
3. Once melted, add your shrimp and cook until almost pink, about 2 minutes.
4. Right at the end, add your crushed garlic.
5. Finish cooking shrimp until garlic is fragrant.
6. Remove your shrimp from the skillet, chop and set aside.
Preparing the Ricotta Filling
1. In a small mixing bowl, add ricotta cheese, parmesan or cheddar cheese, egg, spinach and seasonings.
2. Mix until smooth.
Assembling the Lasagna Rolls
1. To your cooked lasagna noodles, add your ricotta filling.
2. Then top with your shrimp and make roll ups.
3. Place them in your baking dish.
Creating the Sauce
1. Once your roll ups are finished, create your sauce by adding four tablespoons of butter to a skillet along with your heavy whipping cream.
2. Add some reserved pasta water.
3. Let your sauce reduce down once there are tight bubbles, add your cheese and turn off the heat.
Baking the Lasagna Rolls
1. Spread your cheese sauce all over the top of your lasagna noodles.
2. Cover with foil and bake for 20 minutes or until bubbly.
3. Remove foil for the last 5 minutes of baking and broil the top until it's golden brown.
4. Let your lasagna rolls cool before serving. Enjoy!
