For the vegan mayonnaise
- 2 Tbs Chickpeas
- 3 Tbs Aquafaba
- 1 clove Garlic
- 1 Tbs Old-style dijon mustard
- 1 Tbs Lime juice
- pinch salt and pepper
- 0.5 cup Vegetable oil, or neutral oil of choice
- 0.25 cup Olive oil
For the peppers
- 1 cup Canola oil
- 200 g padrón peppers
- pinch Salt flower

For the vegan mayonnaise
1. In the food processor, add the chickpeas, aquafaba, garlic, mustard, lime juice, salt and pepper. Blend until smooth and fully incorporated.
2. Keep blending while slowly adding each kind of oil to achieve a thick mixture.
3. Reserve in the fridge.
For the peppers
1. Heat the oil in a pan and fry the peppers until the skin blisters and they soften. Sprinkle with salt and serve with vegan mayonnaise.
2. Share and enjoy.
