- 0.5 cup Rock salt
- 12 fresh oysters
- 3 Tbs clam juice
- 4 Tbs Unsalted butter
- 2 clove Garlic, chopped
- 1 tsp All purpose flour
- 0.5 cup Parsley leaves, washed, disinfected
- 2 cup Basil, washed, disinfected
- pinch Fresh black pepper
- 1 cup Parmesan cheese, grated

1. Pre-heat your oven to 180°C/350°F.
2. Place the rock salt on a baking tray or dish, keep to the side.
3. Remove the oysters from their shells and drain them; keep the juice and mix it with the clam juice.
4. Melt the butter in a pan, add garlic and toast lightly. Add butter and stir to integrate. In a blender, blend parsley and basil with the clam and oyster juice, and pour into the pan. Season with salt and pepper. Lower the heat and cook while stirring until the sauce thickens.
5. Return the oysters to their shells, baste them with the sauce, top them with cheese and transfer to your baking dish with salt.
6. Bake the oysters until the cheese melts and serve immediately. Enjoy.
