Ingredients

For the gnocchi
- 2 Potatoes, boiled with the skin on
- 0.25 tsp Black pepper
- 0.25 tsp Nutmeg
- pinch Salt
- 1 Tbs Olive oil
- 0.5 cup Wheat flour
- 0.5 cup Whole wheat flour
To serve
- 3 Tbs Olive oil
- 2 clove Garlic, chopped
- 8 Tomatoes, ripe, quartered
- 2 Tbs Paprika
- 2 Tbs Parsley, washed, disinfected and chopped
- pinch salt and pepper

Directions

For the gnocchi
1. Peel the potatoes and mash them until you get a smooth puree, it’s much easier to get this texture if you do this while the potatoes are still hot. Add to the mashed potatoes’ flavor with salt, pepper and nutmeg. Stir in a tbsp of olive oil and mix until you get a smooth and elastic dough. Add the flours and mix with your hands until it’s fully incorporated.
2. Split the dough in 4 parts. Over a floured surface, form long and thin strips. Cut the gnocchi from each strip and shape with the help of a fork.
3. Cook the gnocchi in boiling, salted water for around two minutes or until they start to float. Remove from the pot and drain.
To serve
1. Heat the olive oil lightly in a medium-sized pan on medium heat. Add the garlic and let them cook. Add the tomatoes, let them sear without stirring. When they get some color, start stirring and add the paprika, salt and pepper. The tomatoes will render their juices and with the spice, they will get even softer.
2. With a potato masher, crush the tomatoes and add garlic. Stir in the parsley, lower the heat and let it boil for 5 minutes. Stir in the gnocchi into the warm sauce and mix until they’re perfectly coated with the sauce.
3. Serve and garnish with more parsley.
4. Share and enjoy.
