- 0.5 bunch Kale, stemmed and chopped
- 1 c Red cabbage, thinly sliced
- 3.5 oz shiitake mushrooms, thinly sliced
- 1 small eggplant
- 1 Carrot, chopped into sticks
- 1 tbsp Vegetable oil
- 3 tbsp tamari or soy sauce
- 1.5 tbsp toasted sesame oil
- Sriracha, according to desired spiciness
- 2 clove Garlic
- 0.5 tbsp Ginger, roughly chopped
- 2 Limes, juiced
- 1 spring onion
- 0.5 c Cilantro leaves
- 1 tbsp black and white sesame seeds
- 1 Lime, chopped into wedges

Preparing the rice noodles
1. Simmer the rice noodles in hot water until they are just tender but not mushy. You will finish cooking them in the sauce, so avoid overcooking them.
Preparing the dressing
1. In a small blender, mix all dressing ingredients.
Stir-frying the vegetables
1. Preheat a large skillet or wok over medium-high heat.
2. Follow the order of vegetable cooking times and stir-fry them in vegetable oil until they attain an al dente texture.
Combining the noodles and sauce
1. Next, add the rice noodles and the sauce and incorporate them by stirring gently.
2. Continue cooking for an additional 2 minutes until the noodles soften and become fully integrated into the dish.
3. Add a splash of water if necessary to maintain the desired moisture level.
Garnishing and serving
1. Garnish with scallions, sesame seeds, and cilantro.
2. Serve immediately and enjoy!
