- 1 ciabatta or baguette
- 1 Eggplant
- 1 c marinara sauce
- 0.75 c Breadcrumbs
- 0.75 c Flour
- 0.75 c oat milk
- 1 tbsp pea flour
- 1 tsp Cornstarch
- 0.5 c vegan cheese
- Oil, for frying

Directions

Preparing the Eggplant
1. Cut the eggplant into equal slices lengthwise and sprinkle salt on each slice.
2. Let the eggplant sit for 10 minutes to draw out excess moisture, then pat dry with a kitchen paper towel.
3. Prepare three bowls for the breading: flour, vegan "eggwash" (a mixture of oat milk, pea flour or chickpea flour, and corn starch), and breadcrumbs.
4. Coat each eggplant slice first with flour, then the "eggwash," and lastly with breadcrumbs.
Frying the Eggplant
1. Heat oil in a pan and fry the eggplant slices until browned and crispy on both sides.
2. Pat it dry with a kitchen towel to remove any excess oil.
Assembling the Sandwich
1. Cut the bread in half and spread it with tomato sauce.
2. Layer the fried eggplant slices and vegan cheese on top, then toast in the oven until the cheese has melted.
3. For extra juiciness, add more tomato sauce.
