Corn Succotash
- 2 tbsp Avocado oil
- 2 c Corn kernels
- 0.5 c Bell peppers, mix red and green
- 1 Shallot, diced
- 0.5 jalapeno
- 0.5 c Tomatoes
- 2 tbsp Lemon juice
- 2 tbsp Red wine vinegar
- 1 tsp Kosher salt
- 1 tsp Pepper
- 2 tsp Garlic powder
- 2 tsp Onion powder
- 10 scallops
- 2 tbsp Avocado oil
- Kosher salt
- Black pepper
- finishing salt

Prepare your scallops
1. Place the scallops on a sheet pan with paper towels underneath and on top.
2. Let them sit for 30 minutes so that most of the moisture is absorbed by the towels.
3. Heat a skillet to high heat.
4. Season both sides of your scallops with salt and pepper.
5. Add avocado oil to the hot skillet.
6. Add scallops to the skillet. Press down firmly so that most of the surface area is touching the pan on the scallops.
7. Cook each scallop for 1-2 minutes per side.
8. Remove from heat and set aside.
Prepare the succotash
1. In a skillet set to medium high heat, add oil, shallots, and corn. Cook for a few minutes.
2. Then add in the rest of the succotash ingredients including the seasoning.
3. Cook down until the vegetables are tender.
4. Once the vegetables are tender, turn off the heat.
Plate your dish
1. Plate your dish nicely and finish with finishing salt and a drizzle of avocado oil.
