- 1.25 lb Ground pork
- 1 Egg
- 7 cups Chinese Chives
- 1 tbsp Shaoxing wine
- 1 tsp White pepper
- 3 tbsp Sesame oil
- 0.25 c Soy sauce
- dumpling wrapper
- 1 tbsp Flour
- 1 tbsp Cornstarch
- 0.5 c water

For the dumpling filling
1. Add the ground pork to a large bowl.
2. Mix in an egg, chives, sesame oil, soy sauce, Shaoxing wine and white pepper.
3. Fry a small piece to test the dumpling, adjust by adding more salt if needed.
For the dumpling assembly
1. To assemble the dumplings, wet the edges with water.
2. Pinch the center then make two folds on each side.
3. Place dumplings on a plate with flour to avoid sticking.
For the dumpling cooking
1. Add oil to a pan and fry dumplings for a few minutes until the bottom is golden brown.
2. Add flour, cornstarch and water mixture and cover with a lid to cook for around 5 minutes.
3. Remove the lid and continue cooking until the water is gone and the bottom is crispy.
