Ingredients

Roasted Veggies
- 2 Sweet potatoes, medium size, chopped into 1-inch cubes
- 1 lb brussel sprouts
- 0.25 c broth
- 1 tbsp miso paste
- 2 tsp Garlic powder
- 1 tsp Cumin
- 0.5 tsp Cinnamon
- 0.125 tsp Cayenne, optional
- 1 tsp Salt
- Pepper, generous or to taste
Sweet & Tangy Tahini Dressing
- 0.25 c Tahini
- 0.25 c water, Add more as necessary
- 1 clove Garlic
- 2 tbsp Lemon juice
- 3 dates
- 0.25 tsp Salt

Directions

Preheat oven
1. Preheat oven to 400F.
Prep the veggies
1. Wash, peel, and cut sweet potatoes.
2. Wash and trim Brussels sprouts, and cut them in half.
3. Add cut sweet potatoes and Brussels sprouts to a bowl.
Season the veggies
1. Combine broth and miso paste and set aside.
2. Add spices and miso and broth mixture to sweet potatoes and Brussels sprouts and toss.
3. Spread out evenly on a parchment-lined baking sheet.
Bake the veggies
1. Bake for 35-40 minutes, flipping halfway through.
2. When veggies are nicely browned, remove them from the oven.
Prepare the dressing
1. Combine all the ingredients in a high-speed blender. Blend until smooth.
Finish and serve
1. Top roasted veggies with tahini sauce.
2. Enjoy!
