- 4 Large eggs, refrigerated
Boiling Water
- 5 c water
- 1 tbsp White vinegar
- 0.5 c Soy sauce
- 0.333 c Mirin
- 0.333 c sake
- 0.25 c water
- 2 slices ginger

Boiling the Eggs
1. Bring a large pot of water to boil and add vinegar.
2. Carefully add the eggs in and stir them for the first 30 seconds, it helps the egg yolks to center.
3. Cook for a total of 6 minutes.
4. Transfer the eggs to an ice bath.
5. Let them cool down completely for 4- 6 minutes.
Preparing the Marinade
1. In a saucepan, add soy sauce, mirin, sake, water, and ginger.
2. Bring it to a simmer for 3 minutes, turn off the heat and let it cool down completely.
Marinating the Eggs
1. Peel the eggs and add them to the container.
2. Pour the marinade and place a paper towel on top to help keep the eggs submerged.
3. Cover and refrigerate for 24 hours.
