For Sauce
- 6 Tomatoes, cored
- Fine sea salt and freshly ground white pepper
- 3 Tbs Extra virgin olive oil
- 1 clove Garlic, sliced thin
- 4 Basil leaves, torn by hand
- 0.5 cup Parmesan, freshly grated
- 12 oz dried spaghetti

1. Set up a large bowl with ice water.
2. Bring a large pot of water to a boil, add the tomatoes and cook for 30 to 40 seconds.
3. Scoop out the tomatoes and place in the ice bath.
4. When cool remove the skins then halve the tomatoes horizontally.
5. Squeeze out the seeds and cut into a 1/4 inch dice, set aside.
6. Add the spaghetti to the water with a large pinch of salt and cook till al dente.
7. While pasta cooks, heat 3 tablespoons extra virgin olive oil over medium heat then add the garlic, saute till golden brown then add the tomatoes, season with fine sea salt and freshly ground white pepper.
8. Stir well and simmer till the liquid begins to evaporate, 4 to 5 minutes.
9. When the pasta is cooked add to the sauce, toss and cook for 2 minutes.
10. Divide between 4 warm bowls and finish with fresh basil and grated parmesan.
