Pasta and Sauce
- 1 8oz box lentil or chickpea pasta
- 0.5 c veggie broth
- 5 Tomatoes, small, diced
- 3 clove Garlic, minced
- 1 Shallot
- 0.5 pint Cherry tomatoes
- 4 tbsp Fresh basil
- 2 c veggie sausage
- 1.5 tsp Salt, or to your taste
- 5 tbsp Tomato paste, optional, for thicker sauce

Cooking the pasta
1. Cook pasta according to package instructions.
Preparing the sauce
1. Add veggie broth to pan on medium heat.
2. Add minced garlic and shallots.
3. Saute until shallots are softened.
4. Add diced tomatoes and salt (if using).
5. Simmer until tomatoes soften.
Combining pasta and sauce
1. Add cooked pasta, and cherry tomatoes.
2. Allow to simmer.
3. Add a little broth at a time as necessary during the cooking process.
Final steps
1. Once cherry tomatoes have softened add your veggie sausage ground and fresh basil.
2. Mix to combine.
3. Serve and enjoy!
