Ingredients

Main Ingredients
- 2 blocks ramen noodles, flavor packets discarded
- 2 Eggs, beaten
- 1 small onion
- 1 bell pepper
- 1 cup Carrots, shredded
- 8 oz asparagus (optional)
- 1 Scallion, for garnish
Sauce Ingredients
- 2.5 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 0.5 tsp Chili flakes
- 2 tsp chili crisp
- 0.5 tsp Sriracha
- 0.25 tsp Sesame oil
- pinch Salt

Directions

1. Begin by boiling a pot of water for the ramen noodles.
2. Heat 1 tablespoon of oil in a large non-stick skillet or wok over medium-high heat until hot. Pour in the beaten eggs and scramble them until mostly set. Transfer the scrambled eggs to a dish and set aside.
3. In the same pan, add 2 tablespoons of oil and toss in the sliced onions, sliced bell peppers, and asparagus. Sauté for 4-5 minutes over medium heat until the vegetables become soft and tender. Then add the shredded carrots and cook for an additional 1-2 minutes.
4. While the vegetables are cooking, cook the ramen according to the package instructions. Be careful not to overcook them. Drain the ramen and set aside if the vegetables are still cooking.
5. Add the cooked ramen noodles and scrambled eggs to the skillet with the vegetables, then add in all the sauce ingredients. Stir until everything is well combined and all the ingredients are evenly coated with the sauce.
6. Plate the stir-fry ramen noodles and garnish with some chopped scallions on top if desired.
7. Serve hot and enjoy.
