Beet Hummus
- 2 Beets, small-medium, roasted
- 1.5 c cooked chickpeas
- 0.5 c Tahini
- 0.5 Lemon, juiced
- 1.5 tsp Salt, or to your taste
- 4 clove Garlic
- 0.5 c water, or as needed
- 1 tbsp Fresh rosemary
- Black pepper, to taste

Directions

Preparing the Beets
1. Trim greens off of beets.
2. Wrap the beets in parchment paper at 400F for 40 mins or until a knife goes through with ease.
3. Cool and remove skins.
Making the Beet Puree
1. Add all ingredients to a food processor.
2. Process until smooth.
3. Adjust desired thickness by adding small amounts of water.
