- 3 sheets Vietnamese Rice Paper
- 1 cup cooked rice
- 100 g sushi grade salmon
- 1 mini cucumber
- 1 ripe mango
- 1 tbsp Soy sauce
Dipping Sauce
- 1 tbsp sushi soy sauce
- wasabi

1. Divide cooked rice, salmon, prepared cucumber and mango into 3 equal portions.
2. Wet 1 sheet of rice paper according to package directions, then lay it on a cutting board.
3. Starting at the bottom third of the rice paper, spread 1 serving of rice, 1 serving of salmon slices, 1 serving of cucumber matchsticks, and 1 serving of mango slices. Drizzle about 1/3 tsp of soy sauce over the rice for enhanced flavor.
4. Begin folding the rice paper roll by folding up the bottom edge first, then fold in the sides. Continue rolling the paper roll, ensuring it is tightly folded and all sides are sealed.
5. Repeat the above steps for the remaining 2 rolls.
6. In a small sauce place, add sushi soy sauce and a little bit of wasabi to taste. Mix well.
